The Story
Pacamara is a hybrid variety bred in El Salvador in the 1950s—a cross between the giant-beaned Pacas and Maragogype cultivars. Our lot comes from Finca Santa Petrona on the slopes of the Santa Ana volcano, where the Pacas family has farmed coffee for five generations. These oversized beans are honey-processed: depulped but dried with their sticky mucilage intact, creating a natural sweetness that conventional washing would strip away. The cup is gloriously complex—ripe mango and passionfruit up front, raw honeycomb sweetness in the middle, and a burgundy wine-like acidity that keeps you reaching for another sip.
